Freshly marinated graved salmon LOIN (back fillet) matured in a spice mixture prepared by us.
The special consistency and the first short sweet taste, completed with the freshness of oranges and lime zests, end in an aromatic experience, while not forgetting the culinary delights of salmon.
Our longtime friends Astrid and Kjell from Norway have given us the recipe for this exceptionally good Loin. It is a recipe from their family and has not been given in over 100 years of Norwegian tradition. The now several times tested by us Loin is characterized in particular by its caramel taste and the delicately on the tongue tender salmon fillet. Already its color makes your mouth water.
Origin: The main suppliers from Norway operate high quality certified salmon farms. A low stocking density and clean North Atlantic waters on the west coast of Norway make Norwegian farm salmon salmon of the highest quality.
Hamburger Fischwerker's delight: cut the salmon into thicker pieces. So you get something like a feeling of Nordic "sushi" when eating.
Processing: Salmon are delivered as fresh raw material and are picked at the Hamburg fishmongers at our production site just outside of Hamburg with the specially developed spice mixture in the traditional Nordic style and thus refined.
